The official darktable website does an amazing job already of listing additional resources about it, so I'm only putting a short overview here of resources that particularly stood out to me.

• Bruce Williams' YouTube channel
  Has lots of very in-depth videos about different aspects of darktable; older ones will be based on outdated versions of the software, but new videos are still being released regularly.
• Darktable speedrun: Stylish edits in 40 seconds
  A forum post laying out a generic image editing workflow, focused on simplicity and speed.
